Jaggery powder is a natural sugar which is obtained by manually stirring, beating the melted, clarified and thickened sugarcane juice after it reaches a particular temperature so that crushed jaggery nuggets are formed.

Prepared in an iron kadai (wok) on firewood. Plant based coagulant used to treat the sugarcane juice. Handmade. The jaggery nuggets are naturally dried.

Usage Info

Jaggery nuggets are easy to use when the block is broken down into small pieces. 

The nuggets can be melted or powdered as required. Small pieces of jaggery are given as a snack particularly for small children and elders to keep the lungs purified. Most tamarind or tomato based gravies need the balance of sweet to cut through the sour.These jaggery nuggets come in very handy while cooking.
